This is our Mill House sheepcheese we mature for at least 12 months on our premises.

The cheese becomes very hard and best releases its flavour when thinly sliced or simply grated. 'Hobeln' means wafer thin sliced on a plain or mandolin.

'Hobelkäse'
This is an ideal cheese for accompanying an aperitif, a glass of wine, at the end of a meal, over salads, in combination with smoked fish or air cured beef.
Grated, it can be sprinkled over pasta dishes, salads, pizzas or mixed into a sauce topped on vegetables like broccoli, cauliflower or asparagus.
